This cake was a challenge for me.
I had never worked with portuguese paste and i wasn't sure how to shape the dough to the cake, but after some explanations in a specialty store I ventured forth and the result was the cake on the picture above.
After you unmold the cake and cool it, you need to bar him with jelly (i choose quince jelly because the flavour is neutral). The next step is to cover the cake with the portuguese paste with the colour base wich in this case was red.
When you work with portuguese paste the main secret is in kneading the dough never without a little powdered sugar cornstarch and flour mix. Then you stretch the dough well and be very careful when applying it on the cake. You also need to have your cake really flat, otherwise the paste won't be nice and the result will not be the one you expect.After you unmold the cake and cool it, you need to bar him with jelly (i choose quince jelly because the flavour is neutral). After this step you just have to let your imagination fly away. In this case the theme from the cake was a logo from an air Force Team. It was hard because there were many tinny details but the final result was perfect and the person loved it!
